After being picked cold in the early morning hours, we follow a rigorous program modeled after the techniques used to produce our favorite southern-France rosés. Whole clusters go directly to into the press upon arrival, and the delicate juice is slowly fermented at ultra-low temperatures en route to early bottling, all in our quest to preserve maximum freshness.
